Ingredients: – 1 cup granulated sugar – 1 cup light brown sugar – 1 cup oil (vegetable or canola oil) – 3 large egg – 2 cups grated zucchini – 2 teaspoons vanilla extract – 1 teaspoon salt – 1 teaspoon baking soda – 3 teaspoons ground cinnamon – 1/2 teaspoon baking powder – 3 cups all-purpose flour
Instructions: 1. Preheat the oven to 325 degrees F (165 degrees C). Line the bottom of two 8x4-inch bread pans with a piece of parchment paper, and lightly spray the pans with cooking spray.
In a large bowl, mix together the granulated sugar, brown sugar, and oil until well combined. Add the eggs and vanilla extract, and mix to combine.
Grate the entire zucchini (with peel) using the large holes of a box grater, applying light pressure.
Use a paper towel to gently squeeze out some of the moisture, then lightly measure it into measuring cups without packing it down.
In a separate bowl, mix together the dry ingredients: salt, baking soda, cinnamon, baking powder, and all-purpose flour.
Add the dry ingredients to the bowl with the wet ingredients, and stir until just combined. Fold in the chopped nuts or chocolate chips if using.
Bake at 325 degrees F for 50 to 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
Allow the loaves to cool in the pans for 10 minutes before removing them to a wire cooling rack to cool completely.
