– 1 tablespoon olive oil – ¾ cup diced carrot – ½ cup chopped onion – 2 teaspoons minced garlic – ¾ teaspoon crushed red pepper – 6 cups chicken broth – ½ cup whole-wheat orzo – 3 large egg
– ¼ cup lemon juice – 3 cups shredded cooked chicken – 3 cups chopped spinach – Salt and pepper to taste – 3 tablespoons chopped fresh dill
Heat olive oil in a pot. Add carrots and onions, cook until soft.
Add garlic and crushed red pepper, cook for another minute.
Pour in chicken broth and bring to a boil.
Add orzo and cook until it's tender.
1. In a bowl, whisk eggs and lemon juice until frothy.
Take a cup of hot broth from the pot and slowly add it to the egg mixture while whisking continuously.
