Instructions: 1. Mash the hard-boiled eggs in a bowl. 2. Add mustard, mayonnaise (or Greek yogurt), salt, and pepper to the mashed eggs. Mix well until everything is combined.
Taste the egg salad mixture and adjust the seasonings as needed.
Spread a spoonful of the egg salad mixture onto a slice of bread. Optionally, add lettuce on top of the egg salad.
Top with another slice of bread to form a sandwich. Repeat with the remaining egg salad mixture and bread slices to make about 4 sandwiches.
Store any leftover egg salad in an airtight container in the refrigerator for up to 5 days, depending on the freshness of the eggs.
